Anything can happen in the time between the candidate acceptance and start date. Do not lose contact with the candidate. Schedule periodic calls, lunches with staff, dinners with spouses, dates to fill out paperwork, choice of and pick up of laptop and phone. Use your imagination. 

A formal onboarding program and the establishment of clear expectations for a new hire are essential. Most bad hires are a result of overlooking one or both.
